Introduction
Intro:
As a high-level enchanter I am fed up with people asking Well, what can you do for me
and expecting me to sit around like a lemon listing hundreds of spells for them. Not going to happen people! However, there is obviously a niche for this question so I am writing this page for your convenience. It will not tell you the materials, nor where to get the spell if you are an enchanter or anything like that, but it will give you a clear idea of what is available and best for you.
Oh aye, neither will I will not bother with all the low-level spells, partly because it would make this page unwieldly, but mostly because you can level that fast now it is pointless! I have though taken the trouble to link all the Twink enchants available.
Basically, it all started off and centers around this all to typical conservation:

Sentences like the last one I hear about every third enchant. I invariably return the materials and walk away…
*Grumble over*.
Anyway, after a year of doing this I believe the breakdown is optimised for you, whatever class or type of player you are, though the emphasis is on Twinks and on players and player items at level 35 or better.
Health and Mana enchants

Under level 35:

Enchant Ring: Striking (Damage +2) (NOTE: BoP enchant, only for caster)
Enchant Weapon: Major Striking (Damage +7)
Melee Weapon Spells
Under level 35:
Enchant weapon: lesser beastslayer (+6 vs beasts)
Enchant weapon: lesser elemental Slayer (+6 vs elementals)
Enchant weapon: demonslaying (Procs a 5 second stun and does 75-125 Holy damage to demons)
Enchant weapon: fiery weapon (to often strike for 40 additional fire damage.)
Under level 35 but has reduced effect for players above level 60:
Enchant weapon: Crusader (often when attacking in melee it heals for 75 to 125 and increases Strength by 100 for 15 sec)
Enchant weapon: Icy Chill (often chill the target reducing their movement and attack speed).
Enchant weapon: Lifestealing (often steal life from the enemy and give it to the wielder)
Enchant weapon: Unholy Weapon (often inflict a curse on the target reducing their (effective) melee damage (by 15)
Level 35 or better and meant for Raids:
Enchant Weapon: Battlemaster (occasionaly heal nearby party members of 180 to 300 health when an enemy is struck)
Level 60 or better:
Enchant Weapon: Executioner (occasionally ignore 840 of your enemy's armor).
Enchant Weapon: Deathfrost (your damaging spells and melee weapon hits occasionally inflict an additional 150 Frost damage and reduce the target's melee, ranged, and casting speed by 15% for 8 seconds).
(Procs about 3 times a minute on average).

Enchant Weapon: Spellsurge (gives a melee Weapon a 3% chance on spellcast to restore 100 mana to all party members over 10 seconds. Requires a level 35 or higher item.)
Level 60 or better:
Enchant Weapon: Deathfrost (occasionally inflict an additional 150 Frost damage and reduce the target's melee, ranged, and casting speed by 15% for 8 seconds.)
Improving your healing power
Under level 35:
Enchant bracer: healing power (healing spells +24, damage spells +8)
Enchant gloves: healing power (increase healing spells by up to 30 and damage spells by up to 10) (very rare enchant)
Enchant weapon: healing power (add up to 55 points to healing spells and up to 19 points to damage spells) (very rare enchant)
Level 35 or better:
Enchant Bracer: Superior Healing (healing spells +30, damage spells +10)
(recommended): Enchant Cloak: Subtlety (decrease threat caused by the wearer by 2%)
Enchant Gloves: Major Healing (increase Healing by 35 and Spell Damage by 12)
Enchant Ring: Healing Power (increase healing spells by up to 20 and damage spells by up to 7)
(NOTE: BoP enchant, only for caster)
Enchant Weapon: Major Healing (add 81 to Healing and 27 to Spell Damage)
Level 35 or better and meant for Raids:
Enchant Weapon: Battlemaster (occasionaly heal nearby party members of 180 to 300 health when an enemy is struck)

Crafting and other enchants

Herbalism primary profession
Enchant Gloves: Herbalism (+2)
Enchant Gloves: Advanced Herbalism (+5)
(Of related interest, the enchantment stacks with leather Herbalist's Gloves (an Alliance pattern). Rather annoying that these are leather, but for those than can use them can give you +10 to picking herbs, +25 if you are a Tauren with a pair!
Mining primary profession
Enchant Gloves: Mining (+2)
Enchant Gloves: Advanced Mining (+5)
(Goblin Engineers can make a Goblin Mining Helmet (BoP) for another +5, giving them +10 to mining.)
Skinning primary profession
Enchant Gloves: Skinning (+5)
(Aside a side note, this stacks with Finkle's Skinner, dropped by The Beast, a boss in Blackrock Spire. The dagger equips for +10 to skinning, giving +15 to skinning for the lucky owner.
Fishing secondary profession
Enchant Gloves: Fishing (+2)
(For some utterly unfathomable reason, there is no (+5) for fishing, those other items can boost fishing)
General skill: Riding
Enchant Gloves - Riding Skill (increase mount speed by 2%)
(There is no Advanced riding enchant, nor does this stack with the Riding Crop)
Class skill: Lockpicking
There are no Lockpicking enchantments, which surprises me.
However, Dark Leather Gloves, a leatherworking pattern, can Increases your lockpicking skill slightly
. It increases it by +5 (1 level) actually, which I find handy.
Cooking secondary profession
Strangely, I feel, there are no enchantments to boost cooking, nor, as far as I can tell, any equipment or weapons that will. It's like there's a gap, I feel there though be enchants for weapons and/or headwear for this…
I propose: Chef's hat / apron / spatula from the Daily Cooking quest for a +2 or +5 bonus to cooking, and perhaps enchants to match.
Personally, I was always upset that the wand (Cookie's Stirring Rod) and mace (Cookie's Tenderizer) dropped by Cookie in the Deadmines didn't improve cooking. A lost opportunity, I think!.
